Pittsburgh represents in this year’s James Beard Awards

Apteka, with its vegan Eastern European fare, is a standout among the three local chefs and one restaurant announced as James Beard semifinalists. Chefs Kate Lasky and Tomasz Skowronski, partners in the kitchen and in life, first launched a pop-up restaurant in 2010 before raising funds for their restaurant on Kickstarter.

The menu, written on a piece of paper that hangs ceiling to floor, boasts classics like borscht, stuffed cabbage and pierogies with a twist: fillings include potato and bitter turnip, and earthy mushrooms and sauerkraut. Patrons call the food “life-changing” and “so good they didn’t notice it was vegan.”
